❋ CannersCheyenne and Titus Rhodes are the farmers at Sycamore Banks in Mount Jackson, VA. Cheyenne’s beef is popular and there is not much left! In the fall she will have bulk beef options like halves and quarters if you are interested in larger quantities. Then she will also have retail cuts available. For now, here is the bone info: only 4 bags of “soup bones” at $15 each (3 lbs); 4-5 quarts of broth. I can bring bones with me to your drop off/pick up, so simply email me with your interest (shadyhillva@gmail.com).
If you are interested in chicken bones, we sell broth bags for $5 come June. Stay tuned via email!

Up to you! I like a weighted canner because then I do not have to get my gauge serviced and checked. Review the user manual for best practices with your canner like water levels when canning and servicing suggestions.

Yes! Check to make sure lids are not compromised (any dents or marks on the burnt orange ring).

After the jars sit for 24 hours, the lids should be concave. Tap the top of the lids. If you feel or hear a click, then the jar did not seal. You can also hold the jar by the lid and make sure it doesn’t come off. Just because the contents are not full of water, doesn’t mean it did not properly seal. It may make your contents discolored, but still 100% edible.

Never can dairy; that may be the reason why. Second, you can can an item that makes it easier later. Example, a tomato sauce. You can can just the tomatoes to preserve summer goodness for a later time when you can cook the sauce.
